INFUSION CONTROL CHART

The Infusion Control Chart (CCI) is the graph that allows us to see where the prepared drink is located within the universe of possibilities. Any coffee that we prepare falls somewhere within this table and that is why it is like the map of all infusions. This is very useful, because without a map it is very difficult to know where we are or where the point we want to reach is.

The CCI does not provide valuable objective information that will help make sound decisions about what changes to make in the preparation of the coffee to bring the infusion to the sensory profile that we want to achieve.
